Recipes!!

Taco Salad Bowls

Makes:4 servings
4 flour tortillas (8 inch)
1 Tbsp. chili powder, divided
3/4 lb. extra lean ground beef
1 cup matchlike carrot sticks
1/2 cup plus 2 Tbsp. TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
2 Tbsp. KRAFT Mayo Light Mayonnaise
4 cups torn salad greens
1 large tomato, chopped
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Four Cheese Mexican Style Cheese
1/4 cup chopped fresh cilantro

PREHEAT oven to 425°F. Crumple four large sheets of foil to make four 3-inch balls; place on baking sheet. Place 1 tortilla on top of each ball; spray tortilla with cooking spray. Sprinkle evenly with 1/2 tsp. of the chili powder. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls as they bake.)

MEANWHILE, brown meat with carrots and remaining 2-1/2 tsp. chili powder in large nonstick skillet on medium-high heat, stirring occasionally. Add 1/2 cup of the salsa; cook 2 min. or until heated through, stirring occasionally.

MIX mayo and remaining 2 Tbsp. salsa in large bowl. Add salad greens and tomatoes; toss to coat. Spoon into tortilla shells; top with meat mixture, cheese and cilantro.


Jello Poke Cake


1 (18.25 ounce) package white cake mix
1 (3.5 ounce) package instant vanilla pudding mix
4 eggs
1 cup water
1/4 cup vegetable oil
1 (3 ounce) package fruit flavored gelatin mix
1 cup boiling water
1 cup ice water
1 (12 ounce) container frozen whipped topping, thawed

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
Combine cake mix, pudding mix, eggs, 1 cup water and the vegetable oil and blend well. Beat at the medium speed of an electric mixer for 4 minutes. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until the cake springs back when lightly touched. Let cake cool in pan for 15 minutes.
Meanwhile, dissolve the gelatin in the boiling water, then add the cold water.
Poke holes in the warm cake with a fork at 1/2 inch intervals. Pour gelatin over cake. Chill cake for 3 to 4 hours then frost with whipped topping. Keep cake refrigerated.

A new Look!!

Saturday I had a haircut, weave, and eyebrow waxing,(a first for a weave and a waxing) Thanks mom for going with me!!! We had a good time. I LOVE my new dew!! I should never have waited so long! It's kinda hard to see the highlights, but they look simply marvelous! It's a wonder how a haircut can just refresh ya!!

Happy Birthday Uncle A!




Ki gave me the honors of making A's birthday "cake" this year. He is a major Star Wars freak and so we came up with making a Light Saber ooey gooey cake. It was lots of fun constructing and everyone at the party liked it...so I hear!! Thanks for letting me make it Kar.

Family Dinner this month!




This month we had family dinner at K and A's house. It was delicious. K and A made taco salad stuff (a recipe out of the kraft food magazine), they had all the fixins. G and M brought a yummy homemade salsa and homemade tortilla chips, T brought a bean dip topping and some other yummy stuff for the top of the salads. I made dessert, a lime poke cake with lots of coolwhip topping! It was delicious. We celebrated April birthdays which consisted of Me, T, A and G! We got lots of good presents and had a great time. The kids always enjoy getting together! Thanks for another GREAT family Dinner!!!

From Sunshine to SNOW???

Last weekend we were pushin 80, this weekend we are barely out of the 30's and it's snowing. I didn't get any pics cause I was at work when it started coming down. Unfortunately the roads were too wet (due to it raining before it decided to snow) that the buckets that it snowed didn't stick to the road. It was awesome looking though...the flakes were the size of quarters!!! Weird weird weather!!

A little sunshine!!


We hit almost 80 today!! Before going to work I was able to watch the kids in the sprinkler. I thought it was a little chilly for sprinklers(the wind was blowing), but they sure enjoyed it!!

Spencer flies soooo high! We went and got Spencer a swing for the swingset today. He wasn't too sure about it when he started...he didn't like the feeling of his stomach dropping as he swung. I got some cute pics though! I know he will like it as he gets more and more use out of it!!

outdoor school!

Sariah spent last week at Camp Adams with her school. They attended outdoor school and she had a blast! I was a bit surprised when she came home and cried at the sight of us! She really missed us, as we did her. I was crying before she even arrived back at the school. We've been listening to camp songs all weekend and hearing about all the experiences she had. She even got the hardest bead to get. I guess not many people get it! So, that's awesome we are proud of her. I forgot the camera when she was arriving and so I got pics when we got home!!

Conference Weekend

Unfortunately we didn't get much conference in this weekend. We watched the afternoon sessions both Saturday and Sunday. I found it hard to wake up at 9:00 to watch conference after getting to bed at 5am. Saturday night my lovely visiting teacher dropped by breakfast for our family for Sunday morning. She made us overnight french toast with whipping cream and strawberries. Everyone thought it was very delicious!! Thanks Emily! I enjoyed listening to the sessions of conference that we did get in. I now have to figure out which topic I would like to prepare a family home evening for! I just joined a FHE group and hope that it will be good for me to do! We aren't all that great at holding FHE so hopefully it will help us out having lessons prepared and ready to go!

Library Time and Sweet Finds!!





Went with Kari and her kids to story time today with the babies! It wa a lot of fun! It was the first time I had been there, Spencer really liked it. The leader was blowing bubbles when everybody walked in. Spencer loved them. We had story time and played peek-a-boo with scarves. As you can see Spencer got a kick out of that one!
After library time we came and picked up Joseph and Jaren and went to lunch at Jazzy Bagels. Yummy, had a asiago cheese and spinach bagel with garlic cream cheese! I think I will be going back there!
There was a consignment kids sale that we went to also...got some great deals...Bought a new stroller, 2 pairs of pajamas and 3 pairs of shoes for Spencer and spent $26.00!! I was rather pleased with what I found.
We had a fun day! Thanks Kari for inviting us to go!!
